Sugar Cookies!

Yesterday we made some sugar cookies because Josh hasn't stopped talking about them since Anna made them at Halloween. He was desperate to make them and I wasn't allowed to join in until it came to the boring bit of checking them in the oven or washing up. Typical!
He followed the recipe he found online religiously (cute) and they turned out really well. My boy done good.

We got this recipe from Dailymail.com and it makes about 24 cookies :
  • 200g unsalted soft butter
  • 200g caster sugar
  • 1 egg, lightly beaten
  • 400g plain flour, plus more for dusting

  • Step 1
    Cream the butter & sugar together until well mixed and just becoming creamy in texture.
    Tip - Don’t overwork, or the cookies will spread during baking.

    Step 2
    Beat in the egg until well combined then add the flour and mix on low speed until a dough forms. Gather it into a ball, wrap it in cling film and chill it for at least 1 hour.

    Step 3
    Place the dough on a floured surface and knead it briefly. Roll it out to an even thickness then use your chosen shape of cookie cutters. We only had star and love hearts on hand which isn't exactly Christmassy but we made it work. Lay your shapes out on a baking tray that's lines with greeceproof paper (we didn't use any) and chill for a further 30mins.

    Step 4
    Bake for 6–10 minutes @ 180C/160Cfan/350F/gas 4 until golden brown at the edges. Leave to cool on a wire rack. Decorate as you wish once cooled!
    Tip - You can wrap in foil or cling film and store in a cool dry place for up to a month if you make these in advance.
